Can't stop someone installing enterprise manager.
Doesn't matter anyway as you can see the tables if you have permission on the database.

Only way would be to install sql server on his system using sql server security (no integrated security logins), have the password only known to your application. Then he can't log in to the server without your app.

Means that you own the server and they don't have any other access to it.

Cursors are useful if you don't know sql.
DTS can be used in a similar way.
