The problem is I had a table that used ntext and I need to do some data manipulation. How can I manipulate this data? ntext data type does not allow functions to be run on it like replace or substring. How should I handle this? Convert the ntext to text?

Look for UPDATETEXT in BOL.
Also the max local variable you can have is VARCHAR(8000).
Where as SQL2K5 has VARCHAR(MAX) which supports a larger data.

You can use the SUBSTRING function with TEXT or NTEXT.
