Is it possible to create a trigger that generate a text file when inserting, deleting, updating?

and put what in the text file?

it would be better to audit your data into another table and then periodicaly export that table into a text file.

Did you mean notepad or Excel?
Instead of using trigger, export data to file whenever needed
Look for bcp in Books On Line
