I want to examine the locks taken by a SELECT query. Is HOLDLOCK appropriate? Will HOLDLOCK simply just extend the duration of whatever locks are taken or do more that that – change the number and type of locks. The documentation specifies that HOLDLOCK is equivalent with SERIALIZABLE hence I am afraid that it will do more than simply extend the lifespan of the locks.

That's correct, you have more time to check locks used with that hint.
