Transactions are a method to ensure all related data gets updated. Specifically, when there is more than one change to data to be made, such as a bank inserting a record for a deposit and updating the current balance (assuming it's not just calculated), if either the insert or the update failed, you would want the entire transaction to be rolled back or "undone" instead of only half of it being done.

You can find more info in SQL Server Books Online that comes with your copy of SQL Server.
