(nvarchar fields are easy, but I'm not sure how to go about handling lookup tables, like states)

(example: If I have a table, "Contacts", with foreign key field "StateID" which relates to the "StateID" field of "States" table (which has a primary key of "StateCode"))

sp_fkeys 'Contacts' will show you the referenced table

Can you explain more on what you are trying to do?
Do you want to generate script?
