We are running 2- instances where one being 2005 and other 2008 R2 and we run Full Backups every night and the time slot is recorded consistent.

But on otherday it has consumed more time around 30- 45 Minutes more and I have investigated through Errorlog but have no entry into that.

if the time has increased along with the DB size then it is normal, but only on particular days it is recorded with higher time being consumed for the overall backup.

There is no significant increase in the Data file size of any database picked up for the backup, but this is occurring with more time only on selected days where there is no other activity registered.

Is there any way that I can monitor (if not from TRACE)what could cause the Backup time being increased only for those days which are more (otherwise the following day the backup times would be normal recording).

Please advise and thanks.

Are you backing up to tape or disk?

Check the write diskIO of the target disk. Do you have any benchmarks which allows you to compare?
Another troubleshooting method is to use some trace flags that will give you a more granular read out of what's occuring. To enable specific traces read : http://www.sqlserver-dba.com/2011/05/slow-sql-server-backup-and-restore-with-dbcc-traceon-3004-3605-1.html
