I was interested to see how large a certain Database had become over the past year, and I was shocked to see that the LDF was larger than the MDF. Is this normal?

It's not necessarily normal, but it is not unusual. It probably means you are not backing up your transaction log at all, or at least you are not backing it up frequently enough. The log gets truncated when you back it up, so if you don't back it up it can get very large.

I see, and backing it up should be done through SQL Server not just, our Backup Software?

That depends on what your backup software is. If it is regular file backup software then your backups of the SQL Server data files are almost useless and you should start running SQL Server backups and backing up the SQL Server backup files with your backup software.

If your backup software is fully SQL Server aware then it should be doing the equivalent of a SQL Server backup for you, but you need to confirm that.

I've had issues upon issues with Veritas and database restores. I would recommend ensuring that SQL is backing itself up to disk files, and then getting those with Vertias, rather than relying on the SQL agent. This has always proved very reliable for me.
