hello,

we have 2 databases independents.
my question is : is that better for creating 2 databases in the same instance or 2 databases in 2 instances...?
what are the advantages and disadvantages..?

Two instances means increased management overhead , potential extra licensing costs, slower rebuild .
If you have Instance specific configurations you need to make - then two instances may be suitable.

Are these for Production or Dev?

there are for production.
and theses databases will be mirroring.
i think that is better for 2 instances separately for security and maintenance.
but for memory , 2 instances that means more memory..
is that truth..?
